Recipe: Eating Sweet in the Southeast
Traditionally a British dessert made around Christmas time, the Parkin is a great spiced confection that gets better with age funny enough, perfect for longer boat voyages. Bring this to your next gathering or pack some for a cruise treat.
1 ¾ sticks of unsalted butter
1 large egg
4 Tbsp or ¼ cup Milk
2/3 cup of honey
1/4 cup molasses
1/2 cup packed brown sugar
1 cup quick oats
2 cups flour
1 Tbsp ground ginger
1.5 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon cloves
1/4 teaspoon nutmeg
Heat oven to 325 degrees F. Grease a deep 9-inch square cake tin and line with baking parchment.
Beat the egg and milk together with a fork. Separately, gently melt the syrup, treacle, sugar and butter together in a large pan until the sugar has dissolved. Remove from the heat.
Mix the oats, flour, and ginger and stir into the syrup mixture, followed by the egg and milk mixture. Pour this mixture into the tin and bake for 50 minutes to 1 hour, until the cake feels firm and a little crusty on top.
Cool in the tin then wrap in more parchment and foil and keep for 3-5 days before eating if you can – it’ll become softer and stickier the longer you leave it, up to 2 weeks.
